Quick, Easy, Healthy Dinner Recipe

SAND’S SCRUMPTIOUS SALAD:

Serving size 1-2

  • 1 cup of organic lettuce of choice (spinach, arugula, mixed greens)
  • Handful of veggies of choice (mushrooms, tomato, cucumber)
  • Handful shredded carrots
  • 1/3 cup black beans
  • 1/4 avocado
  • 1 rounded Tbsp sunflower seeds
  • Dash of Sea Salt (make sure it’s sea salt NOT regular table salt)
  • 1 small organic chicken breast (organic turkey breast or wild salmon OK)

Dressing (for 1):

  • 1 tsp Extra Virgin Olive Oil (EVOO)
  • 1-2 Tbsp Balsamic Vinegar
  • Pinch of Garlic Salt
  • Pinch of sea salt and/or fresh ground pepper (if desired)

(Dressing: 40 calories, 5g fat)
